Calves are born on the ranch, starting in spring 2027.

Calves grow up with their mothers on the ranch's pasture.
Finished on grain
Steers kept for beef are finished on grain. We'll publish the ration and days on feed.
Processed under inspection
Cut and wrapped at a USDA-inspected plant, then brought home to the freezer at the ranch for pickup.

- USDA-inspected packages, sold once processing is booked.
If a share is cut custom-exempt rather than under inspection, every package is stamped "Not for Sale" and is for your own household only, as federal rules require. We'll tell you which way your share is processed.
Pick up at the ranch, on your schedule
Planned. This depends on a Nebraska Department of Agriculture food permit and an inspection before we open. We'll confirm every detail here before the first harvest.
- Your half or quarter. The plant cuts and freezes your beef, and we haul it home to the freezer room at the ranch. When it's ready, your account shows a door code. Come by when it suits you, after hours included.
- A farm store. Neighbors can stop in, pick out USDA-inspected cuts from the freezer, and pay for what they take.
- For local ranchers who work with us. If you buy beef through us or have cattle processed through our arrangement, you can use the freezer at the ranch to pick up yours any time. For ranchers

When will beef be ready?
Our first calves arrive in spring 2027. They need time to grow and finish, so our first beef is planned for 2028. People on the list hear first.
How does buying a half or quarter work?
You buy a share of the animal before harvest. The butcher cuts and wraps it to your order, we bring it home, and you pick it up from the ranch freezer. Because you own the share, the packages are for your own household and are stamped "Not for Sale."
How much beef is in a half?
About 250 pounds of packaged beef, as an estimate. The real number depends on the animal and how you have it cut. A quarter is about half that.
Can I buy just a few steaks?
Yes. Because our beef is processed at a USDA-inspected plant, we can sell individual cuts by the package. We plan to sell them from the farm store at the ranch once our Nebraska food permit is in place.
Do I have to pay now?
No. The list is free. When halves and quarters open, you can pay in full, pay ahead in monthly payments with no interest, or ask about financing through the ranch.
Where do I pick it up?
At the ranch near Broadwater. We plan a freezer room with a coded door, so you can pick up on your schedule, including after hours. Your door code shows in your account when your beef is ready. This depends on our Nebraska food permit, and we'll confirm details before the first harvest.
Can I have some sections left whole?
Yes, that's the plan. On your cut sheet you can ask for sections like the strip loin, tenderloin or ribeye roll to come whole, so you can cut steaks or roasts at home. See Cut it yourself.
